in FAQ I see options and flags, which I can't find in the documentation:

What are the good for?

What are the good for?

Most of those are generic libavcodec options, found under
https://ffmpeg.org/ffmpeg-codecs.html#Codec-Options

That entry is almost 12 years old. For encoding with modern codecs, the
wiki is more up-to-date: https://trac.ffmpeg.org/wiki#Encoding
